Squash, pumpkins, zucchini, cucumber, melons, and gourds are all cucurbits or cucurbitaceae – members of the gourd family. There are over 900 varieties of plants in the family. They come in all shapes and sizes, but they all grow on vines that creep along the ground or climb upwards using tendrils.
Here are a few of the cucurbit veggies that you will find growing at Fulton Farm and some recipes for cooking with them. Studies have shown that they have antioxidant, antidiabetic, and anti-inflammatory properties.
